Hello friends! It’s been some seriously sweaty and hot two days, but I am still here, not dried out or wilted. I make sure to hydrate myself (I’ve had about 2.5 liters of water already in the past 4 hours!).

I’ve been doing alot of just moseying around, bumming, and reading (blogs and books alike). I gotta admit, I like having all the time in the world to read blogs. I don’t feel pressured, I can actually read them (instead of sprinting my eyes through lines), make thoughtful comments, and truly absorb what I read.

If only blog surfing/reading/commenting was a paid full-time job…I’m sure we’ll all be making a beeline for the interview. :mrgreen:

With all the time in the world, I can dig around in our fridge and scrounge up some grubs for lunch.

salted eggs

These salted eggs are by no means healthy, because of the high sodium content, but they are a source of protein.

I scooped out half the egg, chopped them, and piled them on top of a piece of rye bread with cheese and avocado.

It wasn’t bad, but it wasn’t divine either. I think the salted egg overpowered everything else, namely the avocado.

On the side I enjoyed some steamed cauliflower and leftover Chinese purple veggies.

Anyone care for some smoked peppered ham?

No I didn’t become a meat-eater since the last post! I am honestly still vegetarian…unless you count eating gelatin making me non-vegetarian. Taiwan makes the best imitation meat…so real that it fooled my cat on several accounts! I know these are highly-processed, so I try to limit my consumption of these imitation meat.

Since I have all the time in the world, I did a little baking.

I told Lauren that these Peanut Butter Crunch Muffins would be the first thing I’ll bake when I get home to Taiwan. I followed her recipe, but sprinkled some muesli on top for aesthetic purpose and some extra crunch. These were good, but could definitely up the amoung of PB! I love uber rich PB cookies or muffins! 😀

I also made some cookies, recipe by yours truly! This is the very first cookie recipe I’ve come up myself, and they sort of remind me of Supercharge-Me Cookies. Perhaps I had those in mind when I was creating this recipe for Muesli Cookies.

Continuing on with these sweet notes, I’d like to share some items commonly found in bakeries here in Taiwan.

Doughy bread stuffed with sweet buttery crumbs in the middle. Again, these are in no way healthy, but oh-so-delicious!

I may have all the time in the world, but I still don’t want to clean up somebody’s mess!

My mom and I went out yesterday morning for a yoga class, leaving my dad and my little sis at home. We were gone for a maximum of 4 hours, and then I came home to a house full of trash and half-eaten food left out.

Um..okay. Who leaves a finished container of pudding in the fridge?

This is something only my little sister would do–leaving containers, juice boxes, soda cans, etc that have been eaten clean in the fridge. Sometimes I feel like my mom and I are the only adults in the house, and my dad and my sister are the immature kids. Is there anyone in your family who’s like my sister?

Anyhooz, I saw this on one of my yoga teachers Facebook yesterday and was totally captured by the wisdom of it.

Do you agree/disagree with any of these observations?

Alright, I’m off to do some more reading, snacking, watching TV! Life is good 😀

    I JUST made those muffins too! But as always I tweaked it… a lot. And they didn’t turn out well because of my modifications 😦 But I’m so jealous of you in Taiwan! I still want to go back so badly. My sister’s there right now and she’s coming back in two days. :S

  • I’m glad you haven’t melted away and are staying cool!! I agree with you on the blog-reading. I like reading them – but it’s so much more fun when you don’t have “oh, I’ve got to do ____” in the back of your mind!
    The muffins look amazing, and can’t wait for the recipe for the cookies – they look great, too!
    haha, your sister reminds me of mine! she’s not so bad anymore (mainly because she’s around less 😛 ) but at least she didn’t leave empty containers in the fridge. That may have made me give a little laugh 😉

  • I’ve been trying to keep up with my Google Reader sporadically through the day instead of trying to tackle it all in one sitting, and I’m really loving it. I don’t get so intimidated that I still have X number of blogs to read and only so much time to do it in. It’s definitely nice to be able to take things slow and make thoughtful comments, and it would sure be a nice job to have 🙂

    I really like that quote by the Dalai Lama… and yes, all of it is very much true. I was actually just talking to my mom about this the other day… how we have so much technology that allows us to do things faster, and yet we never seem to have enough time to do anything. If anything, we have less time than ever, and even more is expected of us on a daily basis… no wonder so many people are stressed out!

  • Haha, I love the empty pudding cup in the fridge! My sister would do the exact same thing so I know how annoying and confusing it can be. I honestly don’t understand it.

    I am LOVING that quote by the Dalai Lama. It’s unfortunate how true it is.

    I loved seeing those salted eggs. I tried one a few years ago, and although the sodium content is out of this world, they are still so delicious! And thank you for sharing those paradoxes…I agree with many if not all of them!

    Haha, that pudding container is priceless. I know how it is to live with someone who’s sloppy. I’m temporarily staying with my Dad and am constantly sweeping this, wiping down that, and decorating this. If I ever make enough money to afford it, I’m hiring a maid service for him.

    Your salted egg on toast looks really satisfying and tasty! That peanut butter crunch muffin looks like quite the treat as well, yum! Also, I can’t belive it’s not ham! Was that fake-ham made primarily out of seitan/wheat-gluten?

    My dad is like your sister. He has put things like a container of oats in the fridge. Your baked goods look SOOO good! And that bread in your last post with the figs.. wow! I want that. Also the bread you got at the bakery in this post looks so scrumptious. Yumyumyum.

    I agree with all of those observations. The modern Western world has been on my mind for a long time. I especially am really noticing how all of these factors can contribute the underlying reasons of why some do things the way they do. There are so many parallels in behaviors in all aspects of a lot of westerner’s lives. But yeah Ayurveda has really opened my eyes to that. There’s so much… moving “forward” going on that I think a lot of people forget their roots. You know what I mean? The basics and all. The things that will be there at the end of the day when all of the unnecessary things are gone.

    Oh, if somebody tried putting empty rubbish containers back into the fridge, I’d be so peeved off! Hah. Conversely, though, I’m the one who puts the container back into the fridge with less than one serving left. Heh. 😀

    I can’t wait for the cookie recipe! It looks really good. 😀

    The paradox is so thought provoking. I hope people realize what is happening to them and change it before it’s too late.

  • Your homemade cookies look great! I’m so impressed that you came up with the recipe yourself! I have a hard time getting my baked goods to come out properly, even when I follow a recipe haha! 😛

    I can totally relate to you about the messy family! My mom went on a trip for a week and I spent the entire time cleaning up after my dad. He’s such a slob!

    I LOVE that quote – all of it is so true! It really makes me want to slow things down and just enjoy spending time with and talking to people!
